Ninja Foodi Bayou Cajun-Stuffed Chicken

- 2 tablespoon. extra-virgin olive oil
- 1 cup . medium onion, diced
- 1 cup . red and green bell pepper, diced
- ¼ teaspoon Kosher salt
- ¼ teaspoon ground black pepper
- 4 boneless, skinless chicken breasts
- 1 cup . shredded cheddar
- 2 tablespoon . Cajun seasoning
Select Sear/Sauté and set it to Medium High. Select Start/Stop to begin. Allow the pot to preheat for 5 minutes.
Add onions and peppers, and sauté until the onion is soft for about 4 minutes. Remove after cook set aside.
With a sharp paring knife, cut a pocket in each chicken breast. Then stuff each chicken with vegetable mixture, top with cheddar and fold over to close the chicken breast. Organize each stuffed chicken breast in the bottom of the Ninja Multi-Purpose Pan
Season chicken all over with Cajun seasoning, salt, and pepper.
Preheat Ninja Foodi on Bale/Roast mode at 325°.
Place Ninja Multi-Purpose Pan and bake until cooked through, about 25 minutes. Check with an Instant thermometer and bake until chicken reaches a temperature of 165° internally.
